Ranch Kitchen: Dorper Lamb Stock
Slow-Simmered Dorper Lamb Stock
Ingredients: Dorper lamb bones, 1 chopped onion, 2 chopped carrots, 2 celery stalks, 3 garlic cloves, 1 bay leaf, 1 tsp black peppercorns, water to cover, and salt to taste after cooking.
Directions: Roast the bones at 425°F until browned for deeper flavor. Transfer to a stockpot with vegetables, garlic, bay leaf, and peppercorns. Cover with water and simmer very gently for several hours. Strain, cool quickly, and season to taste.
Ranch Tip: Use the finished stock for soups, gravies, braises, rice, or as the base for a hearty lamb stew.
