Ranch Kitchen Recipe: Southern Meishan Neck Bones
Slow-Braised Meishan Neck Bones with Greens
Ingredients: 2–3 lb Meishan pork neck bones, 1 chopped onion, 3 minced garlic cloves, 4 cups broth, 1 tsp smoked paprika, 1/2 tsp red pepper flakes, 1 tsp black pepper, 1 bunch collard or mustard greens, and salt to taste.
Directions: Brown the neck bones in a Dutch oven. Add onion and garlic and cook until fragrant. Pour in broth, add seasonings, cover, and simmer gently until the meat is tender. Add chopped greens during the final 30–40 minutes and cook until silky and flavorful.
Ranch Tip: Serve with cornbread and spoon the rich cooking broth over the greens.
