Ranch Kitchen Recipe: Flaky Leaf-Lard Biscuits
Old-Fashioned Meishan Leaf-Lard Biscuits
Ingredients: 2 cups all-purpose flour, 1 Tbsp baking powder, 1 tsp salt, 1/3 cup chilled Meishan leaf lard, and about 3/4 cup cold buttermilk.
Directions: Heat oven to 450°F. Whisk flour, baking powder, and salt. Cut chilled leaf lard into the flour until the mixture resembles coarse crumbs. Stir in enough cold buttermilk to form a soft dough. Turn onto a lightly floured surface, fold gently 3–4 times, pat about 3/4 inch thick, and cut biscuits. Bake on a hot sheet pan until risen and golden.
Ranch Tip: Keep the leaf lard and buttermilk cold and handle the dough lightly for tender, flaky layers.
