Low-and-Slow Texas Wagyu Brisket
Ingredients: Wagyu Brisket, 1 Tbsp kosher salt, 1 Tbsp coarse black pepper, 1 tsp garlic powder, 1 tsp onion powder, and a light coating of oil or mustard as a binder if desired.
Directions: Season brisket generously and refrigerate uncovered for several hours or overnight. Smoke or roast low and slow until the bark is well developed and the meat is tender. Wrap if needed during the cook to prevent excessive drying, then rest thoroughly before slicing across the grain.
